Format: Nordic sustainable seafood, featured in 50 Best Discovery.
Superpower: A “restaurant for friends”, where the focus is on North Sea ingredients and a relaxed, intimate atmosphere.
The Chef Bo Klagston, originally from a small fishing village in Australia, brings a decade of experience from Noma, infusing his craft with deep respect for seasonality and sustainability.
Location & Atmosphere Nestled in central Copenhagen, Iluka embraces an unpretentious, homey aesthetic. The interior design isn’t credited to a major studio—Bo Klagston himself, alongside local artisans, shaped the space to reflect warmth, simplicity, and a personal touch. The restaurant seats just 20 guests, arranged around an open kitchen and a handful of cozy tables, creating an experience that feels more like a dinner among friends than a formal dining room.
Cuisine & Style Concept: “Nordic seafood, guided by nature.” Bo Klagston partners with local fishermen to source the freshest Danish langoustines, Faroese clams, and Norwegian scallops, served at their peak. Philosophy: Seasonal ingredients, sustainable fishing practices, and a minimalist approach to cooking that lets the produce shine.
Signature dishes:
Blue mussels with a curry-style paste (hazelnut, lime, and spices).
Mackerel with tomato sambal and seasonal berries.
Boiled langoustines, served with a variety of house-made condiments.
Drinks A curated selection of natural wines and the house-made limoncello, which the chef proudly dubs “the best in the world.” Average Check Dinner: €60–80 per person.
Service & Experience Iluka embraces the “restaurant for friends” ethos:
Small tables, direct interactions with the chef and team, and an open kitchen that brings guests closer to the culinary process.
A seasonal menu that shifts with the availability of fresh seafood, ensuring each visit is unique.
